Here's one from my Mum - an awesome combination of Trade Aid food products - Fair Trade organic ginger and sugar... and then you can get creative and decorate them however you like!! I remember it was always great fun when we were kids making these!
- 350 g flour
- 1 t baking soda
- 2 t trade aid organic ground ginger
- 120 g butter
- 175 g trade aid cane sugar
- 4 T golden syrup
- 1 egg
- 1 handful of currants
Sift dry ingredients, rub the butter into the flour. Stir in the sugar. Beat the egg and syrup and stir into the bowl.
Mix to form a dough and knead until smooth
Divide into 2 pieces and roll out to about 5mm thickness. Use a gingerbread cutter to cut out the figures and place onto greased baking sheets. Decorate with currants.
Bake at 190 (375) for 12-15 minutes, until golden. Cool slightly and then place onto a wire rack to cool and crispen.
Decorate to your hearts content...
