Description
A fruity cobbler recipe (with a bit of sweet spice!) submitted by Clare Devereux - great for this time of year when fruit trees are in abundance!
2 dessertspoons butter, melted
1 cup flour (white, or could be mixed)
2 teaspoons baking powder
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg (optional)
1 cup brown sugar
2/3 cup of milk (or soy milk)
2 cups fresh fruit (eg, blueberries, or larger fruit like peaches or apples cut in small pieces or slices)
Preheat oven to 190C. Butter an oven-proof dish. In bowl, start with butter, add (sifted together) flour, baking powder, salt, spices, and then stir in sugar, stirring until combined well. Add milkand mix until just combined. Do not beat. Pour mixture into dish, scatter the fruit over mixture, leaving a little plain edge. Bake in the middle of the oven about 40 minutes, or until the edges are nicely browned. Serve warm or at room temperature with whipped cream or ice cream.
