Description
DELICIOUSLY MOIST CHOC MUFFINS, WITH THE ADDED BONUS OF DELICIOUS BANANA'S AND BERRIES. TOPPED OFF WITH A LIGHT DELICIOUS CHOC FROSTING. MAKE THEM AS HEALTHY OR AS NAUGHTY AS YOU LIKE! BUT GO ON ENJOY!
Ingredients
- 1⁄2 c trade aid cane sugar
- 1 egg
- trade aid dark chocolate broken into bits
- 2 c flour (white/wholemeal )
- 100 ml water
- 1 c icing sugar
- 2 T trade aid baking cocoa
- 1 t baking soda
- 1 large mashed banana
- 1⁄2 c strawberries (or berries of your choice)
- 75 g butter or margarine
- 1⁄2 c oil (grapeseed, trade aid olive oil, ricebran etc)
- 1 T additional of trade aid baking cocoa
Instructions
BEAT OIL, TRADE AID SUGAR AND EGG TOGETHER. ADD FRUIT AND TRADE AID CHOC BITS, MIX. SIFT IN FLOUR, TRADE AID BAKING COCOA AND DISSOLVE BAKING SODA IN WATER AND ADD TO MIXTURE. MIX WELL POUR INTO GREASED MUFFIN TIN AND BAKE AT 220c FOR APPROX 10-15 OR UNTIL TOP OF MUFFIN SPRINGS BACK WHEN PRESSED. MIX APPROX 75G BUTTER/MARGERINE WITH 1 CUP OF ICING SUGAR AND 1 TBLS TRADE AID BAKING COCOA, BEAT WITH MIXER UNTIL LIGHT AND FLUFFY, ICE MUFFINS AND ENJOY
